Small Rice is also called Varai, Kodri, Bhagar, or Samak chawal. Its one of the few cereals allowed to eat during Navratri fast, as it is a seed not a grain. It is completely gluten free, high in fibre and amino acid except lysine. This is a perfect breakfast and snack recipe on fast days for people with diabetes.

Serving 12-14 Idlis.

Samak Rice 1 cup (125gm)
Beaten curd 1 cup (200ml)
Green Chilli 1
Finley chopped Ginger 1 tbsp
Grated carrot ½ cup (100 gm)
Eno powder (optional) 1 tbsp
Salt To taste


  • Wash and soak Samak rice with salt and curd for 2 hrs.
  • In a blender, add chopped chilli, ginger and grind the soaked rice and curd. Ferment this idli batter overnight for 6-7 hours
  • Add grated carrot and mix well. Add Eno powder and stir gently. Grease the idli mould lightly. Pour batter in each mould and steam in the rice cooker or a vessel for 10 minutes.
  • 4. When it cools off, gently separate from mould. Serve hot with groundnut chuntney.
